Cranberry and
Apple Muffins
1/4 c egg whites (approx. 4 eggs with yolks
removed), slightly beaten
3/4 c brown sugar, packed
3/4 c Granny Smith apples, peeled and chopped
3/4 c fresh cranberries, chopped
1 1/2 c unbleached flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/4 c fat-free sour cream
1 tsp pure vanilla extract
Preheat oven at 350F (175C).
Prepare 12 standard muffin pans with cooking
spray and flour; set aside.
In a mixing bowl, combine flour, baking
soda, cinnamon, and salt.
In another mixing bowl, combine egg whites,
brown sugar, sour cream, cranberries, apples, and vanilla extract.
Mix wet ingredients with dry ingredients
until moistened. Fill each muffin cup with about 1/3 cup of
combined mixture. Bake for 20 minutes, or until test toothpick is
clean. |
