Chicken is generally a lean meat, before you start with altering it for cooking.  Fried chicken is probably the worst take-away food you could have. If you're having roast chicken, remove the skin before you eat it and save yourself a few extra hours in the gym!

As mentioned in other sections of this site, it's a good idea to invest in a few non-stick pots and pans for cooking your favorite foods so you don't need to use as much butter and oil - and in most cases, you don't need any at all. Grilling chicken rather than frying is a great way to keep the delicious lean chicken taste but reduce the saturated fat that comes with deep-frying and shallow frying. 

If a recipe you're following requires crumbing the lean chicken, try to either avoid white bread, or use a mix between wheat or multi-grain and white bread.  Remember you can bake your crumbed chicken rather than shallow or deep-frying it!  Sure, there won't be as much a butter taste to it, but it will still be crunchy and delicious - and LEAN!
