Salad! The 'greenest' and one of the healthiest words ever used in
the food world. Unfortunately, these days, many salads are
actually quite unhealthy, fatty and sugary and couldn't be
considered 'good for you'.
For salads, the healthiest thing to do is not have the dressing
drizzled on (and sometimes soaked in.. yuk) it. A lean salad
doesn't have to be an tasteless meal or healthy accompaniment.
One of the easiest
general salads to make are a mixture of the following:
Cos or Iceberg lettuce, Baby Spinach leaves,
Cherry/grape tomatoes,
Red onion, Capsicum/bell peppers,
Olives (not soaked in oil), Cucumber,
and then tossed together in a big bowl. Eaten as a lean
salad as is or drizzle some balsamic vinegar over the salad.
Even feel free to add a boiled egg or two and some anchovies and
grilled chicken - similar to the Caesar salad but without the
highly fattening and creamy Caesar salad dressing that is usually
associated with this fatty salad. If you like croutons in
your soups and salads, use slices of bread, put them on a flat
baking try and put them in the oven until brown (turning 1 - 2
times) and then break or slice.. or you can cut them before you
put them in the oven. Much healthier than those oil based
croutons. You don't need oil to make things crunchy ;)
When you're eating out and want to order a lean salad, simply
request no dressing or dressing on the side. These are just some
easy ways to keep the delicious taste of salads by keeping them
lean without the extra calories!
