Tuna pasta salad
Salad:
12 ozs can tuna in water, drained and flaked
2 1/2 c rotini pasta, uncooked
1 c canned peas, drained
1 c celery, sliced
1/2 c capsicum, chopped
1/2 c onions, chopped
Dressing:
1 c fat-free mayonnaise
3 tbsp bottled lemon juice
1/2 tsp thyme
1/8 tsp salt
1/8 tsp black pepper
Cook pasta according to packet directions.
Rinse with cold water and drain. To prepare salad, combine tuna,
pasta, peas, capsicum, celery and onions in a mixing bowl. Mix
well.
To prepare dressing, combine mayonnaise,
lemon juice, thyme, salt, and black pepper. Mix well. Gently stir
mixture into salad. Cover and refrigerate for one hour. |
