Many creamy soups are creamy because of the added fats and sugars. However, a healthier alternative is to use corn flour as a thickening agent. This way, all the taste is still there, but you have yourself a creamy lean and healthy soup.

If you like croutons in your soups and salads, use slices of bread, put them on a flat baking try and put them in the oven until brown (turning 1 - 2 times) and then break or slice.. or you can cut them before you put them in the oven. Having the croutons for your lean soup in the oven rather than toasting them with the usual toaster gives a better overall crunch and color.

This is a much healthier alternative to the oil based croutons that most restaurants use! The best thing is, they're still just as crunchy as any other crouton! 

If you want to, you can sprinkle some basil or oregano onto the bread while it's on the baking tray about to go into the oven. No butter or oil is required!
