Low Fat and Tasty
Garlic Mashed Potatoes
2 pounds Yukon Gold potatoes, peeled and cut
6 garlic cloves, peeled and sliced in half
1/3 cup fat-free milk
2 cups of baby spinach, roughly diced
1 tsp poly-unsaturated salt reduced butter (for sauté)
1/2 tsp black pepper
Boil potatoes in a large saucepan for 20-25 minutes until potatoes
are tender.
Sauté spinach and garlic with butter in a
non-stick frying pan. The butter is only to help stop the spinach
from sticking to the pan. When cooked, spinach should be darker in
color and clumping up.
Drain potatoes, half mash with potato masher
or mixer, then add milk. Mash until smooth or desired consistency,
then add spinach and garlic and stir/fold it in.
Add black pepper to taste. |
